20 years in the making

Chef Soy's restaurateur journey from Las vegas to Utah

We began as a small, humble restaurant in the heart of Holladay, opening our doors under the name Rice Basil. While our beginnings were modest, they were built on a simple idea: serve exceptional food with genuine hospitality.

That vision was driven by Chef Soy, the creator and executive chef behind our menu. His culinary journey began in the bustling kitchens of Las Vegas, where he trained behind the scenes at some of the city’s most respected restaurants. It was there that he discovered his passion not only for cooking, but for creating a restaurant where he could fully express his creativity and share his own culinary vision.

Over time, that dream evolved through thoughtful planning, strong operational leadership, and a commitment to sustainable growth. These principles became the foundation for what would grow into one of Utah’s recognized dining brands.

Like many independent restaurants, the journey hasn’t always been easy. Every challenge has strengthened our commitment to excellence, resilience, and continuous improvement. Those values continue to guide every decision we make and every guest we serve.

Mint’s growth has also been made possible by an incredible team of partners. Ainur, Ken, Kristen, Jason, and Michael have each played an essential role in shaping the company, contributing their expertise across operations, design, strategy, and expansion. Together, they have helped transform a single neighborhood restaurant into the Mint experience our guests know today.

Today, with thriving locations in Sandy, Cottonwood Heights, Holladay, Sugar House, and Draper, we are proud of how far we’ve come. Our success is rooted not only in ambition, but in the trust of our guests, the dedication of our team, and the strength of the people behind the brand.
