2016
The Beginning
Soy’s culinary adventure began with his very first restaurant in the heart of Holladay. The cozy spot quickly became a beloved destination for locals who craved expertly crafted sushi. Many of those early patrons remain loyal to this day, now enjoying his creations at Mint’s current locations.
2017
A New Chapter on State Street
When Rice Basil was demolished, Soy saw an opportunity to bring something fresh to the table. He launched a new concept restaurant on State Street, where he continued showcasing his culinary artistry through delicate, flavorful dishes. The restaurant found quick success and earned a devoted following. Although it later transitioned to new management, Soy’s reputation for excellence endured.
2018
A Bold Move: Blue Marlin
Driven by a desire to create a space entirely his own, Soy opened Blue Marlin in Sandy—the very area where his journey first began. The restaurant represented the culmination of his creativity and vision, offering fresh, innovative cuisine that delighted a growing customer base.
2019
The Magic Begins
With momentum building, Soy, Ainur, and their partners Ken and Kristen rebranded the restaurant as Mint Tapas & Sushi. The new name reflected their evolving menu and commitment to high-quality, fusion-inspired cuisine. This rebrand marked the beginning of something truly special—where Soy’s distinctive style flourished and the Mint identity was born.
2021
Expansion: The Cottonwood Heights Location
With a loyal following eager for more, the team expanded to a second location in Cottonwood Heights. Soy, Ainur, and partners Ken, Kristen, Jason, and Michael seized the opportunity to share their vision with a wider community—opening another exciting chapter in the Mint journey.
2022
Back to Where It All Started: Holladay Village Plaza
In 2022, Mint opened its doors in the heart of Holladay Village Plaza. This location brought together vibrant atmosphere, live music, exceptional service, and unforgettable food. It quickly became a go-to for guests seeking a complete and elevated dining experience.
2023
A Milestone Moment: Our Sugar house location Opening
The Sugar House location at 2121 S McClelland Street opened in 2023, offering a beautifully designed space and bringing Soy’s expertly crafted dishes to another dynamic neighborhood. This marked yet another major milestone in the brand’s expansion across Utah.
2025
Now Serving Draper: Our Newest Mint Location
Most recently, Mint opened its newest location in Draper, continuing its mission to deliver thoughtfully crafted cuisine and warm hospitality. This latest venture brings the signature Mint experience to a vibrant and growing community, underscoring the team’s commitment to culinary excellence and innovation.
