2016
The Beginning
Soy’s culinary adventure began with his very first restaurant, located in the heart of Holladay. The cozy spot quickly became a beloved destination for locals who craved expertly crafted sushi. Many of those early patrons have remained loyal, now enjoying Soy’s creations at our current locations.
2017
A New Chapter on State Street
When Rice Basil was demolished, Soy saw an opportunity to bring something fresh to the table. He launched a new concept restaurant on State Street, where he continued to showcase his culinary artistry with delicate dishes that captured the hearts of food lovers and earned him continued success. Eventually, the restaurant transitioned to new management, but Soy’s reputation for excellence remained.
2018
A Bold Move: Blue Marlin
Driven by his desire to create a dining experience that was entirely his own, Soy took a leap and opened Blue Marlin in Sandy, the area where his journey had first started. This restaurant represented the culmination of Soy’s creativity and vision, offering fresh, innovative dishes that delighted a growing following.
2019
The Magic Begins
With his continued success and a clear vision for the future, Soy and his partner Ainur made the decision to rebrand and fully take ownership of their restaurant. They renamed it Mint Tapas and Sushi, reflecting their evolving menu and dedication to high-quality, fusion-inspired cuisine. This was where the magic truly began, as Soy’s unique style continued to flourish.
2021
Expansion: The Cottonwood Heights Location
With an ever-growing following of loyal fans eager to experience Soy’s culinary masterpieces, the time was right to expand. Soy and Ainur embraced the opportunity to open a second location in the vibrant neighborhood of Cottonwood Heights. It was another exciting chapter in their story of success and growth.

Back to Where It All Started: Holladay Village Plaza
Does it get any better? In 2022, we opened a brand-new location in the heart of Holladay Village Plaza, bringing together the perfect blend of atmosphere, music, service, and, of course, unforgettable food. The new spot quickly became a favorite for those who appreciate a complete dining experience.
